Step-by-Step Cooking Walkthrough
  1. Prep Pan & Oven: Preheat oven to 325°F (165°C). Line a 9x13-inch metal baking pan with parchment paper, leaving an overhang on the sides for easy lifting later. Lightly grease parchment with non-stick spray.
  2. Bake the Crust: In a medium bowl, combine graham cracker crumbs, sugar, melted butter, and salt until mixture resembles wet sand. Press firmly and evenly into the bottom of the prepared pan using the flat bottom of a measuring cup. Bake for 10 minutes until lightly golden. Set aside to cool slightly while preparing the filling.
  3. Mix the Cheesecake Layer: In a large bowl using an electric hand mixer on medium-low speed, beat room-temperature cream cheese and sugar until silky smooth and lump-free (about 2 minutes). Add eggs one at a time, beating gently after each addition just until incorporated. Stir in sour cream and vanilla extract. Pour the batter evenly over the warm crust and smooth the top with an offset spatula. Bake at 325°F for 20 to 22 minutes until edges are set but center still gently wobbles.
  4. Brown the Butter & Simmer Topping: While the cheesecake bakes, melt 6 tablespoons of butter in a saucepan over medium heat. Swirl occasionally for 4 to 5 minutes as the butter foams, crackles, and turns nutty amber with golden brown milk solid specks. Immediately remove from direct heat. Stir in brown sugar, maple syrup, heavy cream, cinnamon, vanilla, and salt until smooth. Fold in toasted chopped pecans and simmer on low for 1 minute until glossy and sticky.
  5. Layer & Final Bake: Remove cheesecake from oven. Gently spoon and spread the warm brown butter pecan mixture evenly over the par-baked cheesecake layer. Return to the oven and bake for an additional 12 to 14 minutes until the pecan topping is bubbling gently around the edges.
  6. Chill, Slice & Garnish: Cool pan completely on a wire rack at room temperature for 1 hour, then cover and transfer to the refrigerator to chill for at least 4 hours (overnight yields best results). Lift bars out of pan using parchment overhang. Sprinkle lightly with flaky Maldon sea salt, wipe a chef knife with a warm damp cloth between cuts, and slice into 16 clean squares!

Notes

Chef Secret: Browning the butter until it develops nutty hazelnut flecks elevates the pecan topping to gourmet bakery status! Be sure to let the baked bars chill in the refrigerator for at least 4 hours (or overnight) before slicing with a hot, clean knife for razor-sharp bakery edges.
