Ingredients

Pastry Crust
  • 1 sheet puff pastry thawed if frozen
Filling
  • 3 large onions sliced
  • 2 tablespoons olive oil for caramelizing
  • 1 teaspoon salt to taste
  • 1 teaspoon sugar to enhance caramelization
  • 1 cup heavy cream
  • 2 large eggs
  • 1 cup grated cheese such as Gruyère or Parmesan
  • 1 teaspoon thyme fresh or dried

Method

Prepare the Pastry
  1. Preheat the oven to 400°F (200°C). Roll out the puff pastry and fit it into a pie dish. Prick the bottom with a fork and set aside.
Caramelize the Onions
  1. In a skillet, heat olive oil over medium heat. Add sliced onions, salt, and sugar. Cook, stirring occasionally, until onions are golden brown and caramelized, about 25-30 minutes.
Prepare the Filling
  1. In a mixing bowl, whisk together the heavy cream, eggs, thyme, and a pinch of salt and pepper. Stir in the caramelized onions and grated cheese.
Bake the Tart
  1. Pour the filling into the prepared pastry crust. Bake in the preheated oven for 25-30 minutes, or until the filling is set and the top is golden.
Serve
  1. Allow the tart to cool slightly before slicing. Serve warm or at room temperature.
