Ingredients
  

  • 1.5 lbs boneless, skinless chicken breasts
  • 3 cloves fresh garlic, minced
  • 0.75 cups dry Marsala wine
  • 8 oz cremini or button mushrooms, sliced
  • 8 oz fettuccine or linguine pasta
  • 1 cup low-sodium chicken broth
  • 0.5 cups heavy cream
  • 2 tbsp olive oil
  • Salt and pepper to taste

Method
 

  1. Prepare all ingredients by slicing the chicken into strips and mincing the garlic.
  2. Heat olive oil in a large skillet over medium-high heat. Season chicken with salt and pepper; sauté until golden brown (5-7 minutes).
  3. Add minced garlic and sliced mushrooms; cook until mushrooms are tender (about 5 minutes).
  4. Pour in Marsala wine and chicken broth; scrape the bottom of the skillet for added flavor. Simmer for about 10 minutes until slightly reduced.
  5. Stir in heavy cream; let simmer for another 5 minutes.
  6. Cook pasta according to package instructions until al dente, then toss it with the sauce in the skillet until well-coated.
