  • 7 oz dark chocolate (70% cocoa) chopped
  • 1 cup heavy cream chilled
  • 2 tbsp granulated sugar
  • 1 tsp vanilla extract
  • 2 large egg whites

Method
 

  1. Melt the dark chocolate in a heatproof bowl over simmering water until smooth. Let cool slightly.

  3. In another bowl, beat the egg whites until stiff peaks form.
  4. Gently fold the melted chocolate into the whipped cream, then carefully incorporate the beaten egg whites until blended.
  5. Spoon the mixture into serving dishes and refrigerate for at least 2 hours before serving.
