  • 2 large fresh oranges, sliced
  • 2 large lemons, sliced
Cake Batter
  • 1/2 cup unsalted butter (113g)
  • 1 cup granulated sugar (200g), divided
  • 1 cup all-purpose flour (120g)
  • 1 tsp baking powder
  • 2 large eggs
  • 1 tsp vanilla extract
  • a pinch salt

Method
 

Cake Preparation
  1. Preheat the oven to 350°F (175°C) and grease a round cake pan.
  2. Arrange orange and lemon slices in the bottom of the pan.
  3. In a saucepan, melt 1/4 cup of butter with 1/2 cup of sugar until bubbly and golden; pour over the fruit.
  4. In a bowl, whisk together the flour, baking powder, and salt.
  5. In another bowl, cream the remaining butter and sugar until light; add the eggs one at a time along with the vanilla.
  6. Gradually mix the dry ingredients into the wet mixture until just combined. Pour the batter over the fruit.
  7. Bake for 30-35 minutes or until golden brown. Cool slightly before inverting onto a plate.
