Method

Step-by-Step Baking & Decorating Instructions
  1. Whisk Dry Spiced Base: In a large bowl, whisk together the all-purpose flour, ground ginger, cinnamon, cloves, nutmeg, allspice, baking soda, and fine sea salt until evenly distributed. Set aside.
  2. Cream Butter, Sugar & Molasses: In a stand mixer fitted with the paddle attachment (or large bowl with an electric hand mixer), beat the softened butter and dark brown sugar together on medium speed for 2 minutes until light and fluffy. Add the room-temperature egg, dark molasses, and vanilla extract. Beat until smooth and glossy.
  3. Combine into Dough & Chill: Turn mixer to low speed and gradually add dry flour mixture until a soft, pliable dough forms. Divide dough into two equal flat discs, wrap tightly in plastic wrap, and chill in the refrigerator for at least 1 hour (or up to 48 hours) to firm up.
  4. Roll & Cut Shapes: Preheat oven to 350°F (175°C). Line two large baking sheets with parchment paper. Lightly flour your work surface and rolling pin. Roll out one dough disc to 1/4-inch thickness (do not roll thinner!). Cut out shapes using gingerbread men or festive cookie cutters. Transfer shapes 1.5 inches apart onto prepared baking sheets.
  5. Bake to Chewy Perfection: Bake at 350°F (175°C) for 8 to 10 minutes for 3-inch cookies (8 minutes for softer chew, 10 minutes for slightly firmer edges). The edges should be just set and matte, while centers remain soft to the touch. Remove from oven and let rest on the hot pan for 5 minutes, then transfer to a wire rack to cool completely.
  6. Whip Royal Icing & Decorate: In a small bowl, whisk together powdered sugar, milk, light corn syrup, and vanilla extract until smooth. It should be thick yet pipeable (similar to toothpaste consistency; add tiny drops of milk if too thick). Spoon icing into a piping bag fitted with a small round tip (or zip-top bag with corner snipped). Pipe sweaters, smiles, and lace details onto cooled cookies. Let icing set for 30 minutes until dry to the touch!

Notes

Chef Secret: For bakery-quality chewiness, do NOT roll the dough paper-thin! Roll your chilled dough to a generous 1/4-inch thickness (6mm) and bake for only 8 to 10 minutes until the edges are just set. They will look slightly soft when leaving the oven, but firm up into the most tender, chewy crumb imaginable as they cool.
