Ingredients
  

Crust
  • 1.5 cups graham cracker crumbs
  • 0.5 cups unsalted butter, melted
  • 0.25 cups granulated sugar
Filling
  • 4 packages full-fat cream cheese, softened (8 oz each)
  • 1 cups sour cream
  • 2 tsp pure vanilla extract
  • 1 cups granulated sugar
  • 4 large eggs at room temperature

Method
 

Preparation
  1. Preheat oven to 350°F (175°C). Grease a springform pan.
  2. In a bowl, combine graham cracker crumbs, melted butter, and ¼ cup sugar. Press mixture into the bottom of the pan.
  3. In another bowl, beat cream cheese until smooth. Gradually add remaining sugar and mix until fluffy.
  4. Mix in sour cream and vanilla extract. Add eggs one at a time, blending gently after each addition.
  5. Pour filling over the crust and bake for 50-60 minutes until center is slightly jiggly.
  6. Cool in the oven with door ajar for about an hour, then refrigerate for at least four hours before serving.
