Ingredients
  

Wet Ingredients
  • 1 cup cottage cheese preferably low-fat
  • 2 large eggs
  • 1 cup milk can use almond or oat milk
  • 2 tablespoons lemon juice freshly squeezed
  • 1 teaspoon vanilla extract
Dry Ingredients
  • 1 cup all-purpose flour
  • 2 tablespoons sugar can adjust to taste
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 tablespoon lemon zest freshly grated

Method
 

Prepare the Batter
  1. In a blender, combine the cottage cheese, eggs, milk, lemon juice, and vanilla extract. Blend until smooth.
  2. In a mixing bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and lemon zest.
  3. Pour the blended mixture into the bowl with the dry ingredients and stir until just combined. Do not overmix.
Cook the Pancakes
  1. Heat a non-stick skillet over medium heat and lightly grease with butter or oil.
  2. Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, about 2-3 minutes.
  3. Flip the pancakes and cook for an additional 2-3 minutes until golden brown.
  4. Repeat with the remaining batter, adjusting heat as necessary.
Serve
  1. Serve warm with your choice of toppings such as maple syrup, fresh fruit, or yogurt.
