Method

Step-by-Step Cooking Walkthrough
  1. Sauté the Mirepoix Aromatics: Heat 2 tablespoons of extra virgin olive oil in a large Dutch oven or soup pot over medium heat. Add diced onion, carrots, and celery. Cook for 6 to 8 minutes, stirring occasionally, until vegetables are tender and fragrant.
  2. Bloom Garlic & Herbs: Add minced garlic, rosemary, thyme, red pepper flakes, 1/2 teaspoon of salt, and black pepper. Stir constantly for 60 to 90 seconds until the garlic is intensely fragrant without browning.
  3. Simmer Beans & Broth: Pour in the vegetable broth and drained cannellini beans. If using a parmesan rind, drop it directly into the pot. Bring soup to a boil over medium-high heat, then reduce heat to low, cover partially, and simmer gently for 12 minutes to let the flavors meld.
  4. Blend for Velvety Texture: Remove parmesan rind temporarily. Use an immersion blender to pulse the soup 3 to 4 times, or transfer 1 1/2 cups of beans and broth to an upright blender, puree until silky smooth, and stir back into the pot. This creates a luxurious, creamy texture without heavy dairy.
  5. Wilt the Kale: Add the chopped Tuscan kale to the simmering broth. Cook uncovered for 4 to 5 minutes until the kale is tender and vibrant deep green.
  6. Season, Garnish & Serve: Stir in fresh lemon juice. Taste and adjust with additional sea salt and black pepper as needed. Ladle steaming soup into warm bowls, top with freshly grated parmesan ribbons, a drizzle of olive oil, and serve with toasted crusty bread!

Notes

Chef Secret for Natural Creaminess: Never add heavy cream! Instead, scoop out 2 cups of the cooked beans with a ladle of broth and blitz them in a blender (or use an immersion blender directly in the pot for 10 seconds). Stirring the blended beans back into the soup creates an ultra-velvety, rich body while keeping the meal naturally light, wholesome, and fiber-packed.
