- Preheat your oven to 350°F (175°C) and line a cupcake tray with paper liners.
- In a large bowl, whisk together flour, cocoa powder, sugar, baking soda, and salt.
- In another bowl, mix vegetable oil and water until combined. Optionally add vanilla extract for flavor.
- Combine wet ingredients with dry ingredients, stirring gently until just mixed.
- In a separate bowl, beat cream cheese with powdered sugar and egg yolk until smooth.
- Fill cupcake liners with two tablespoons of chocolate batter, followed by a dollop of cream cheese filling, then top with more chocolate batter.
- Bake for 20–25 minutes or until a toothpick inserted comes out clean.
