Ingredients
  

  • 4 large russet potatoes
  • 3 pieces boneless, skinless chicken breasts (about 1 lb)
  • 1 cup buffalo sauce
  • 1 cup shredded sharp cheddar cheese
  • 2 pieces green onions chopped
  • 1/2 cup sour cream
  • 1/2 cup crispy bacon bits (optional)

Method
 

  1. Preheat oven to 400°F (200°C). Wash and scrub the russet potatoes until clean.
  2. Place potatoes on a baking sheet and bake for 45-60 minutes until tender.
  3. Season the chicken breasts with salt and pepper; bake alongside potatoes for 20-25 minutes or until cooked through.
  4. Shred the chicken and mix it with buffalo sauce.
  5. Once the potatoes cool slightly, cut them in half lengthwise and scoop out some flesh, reserving it for later use.
  6. Fill each potato half with the buffalo chicken mixture and top generously with cheddar cheese.
  7. Return to the oven for an additional 10-15 minutes until cheese is melted and bubbly.
  8. Serve drizzled with sour cream and topped with chopped green onions.
