  • 3 pieces boneless skinless chicken breasts (about 1 lb)
  • 1/2 cup hot sauce (like Frank's RedHot)
  • 1/4 cup melted butter
  • 1 cup shredded sharp cheddar cheese
  • 1/4 cup ranch dressing
  • 1/4 cup sour cream

Preparation Instructions
  1. Preheat oven to 400°F (200°C). Scrub potatoes and prick with a fork. Bake for 45-60 minutes until tender.
  2. While baking, poach chicken in salted water for 15-20 minutes until cooked through; shred using two forks.
  3. Mix shredded chicken with hot sauce and melted butter in a bowl.
  4. Cool baked potatoes slightly, slice in half lengthwise, and scoop out some flesh to create skins.
  5. Fill each potato skin with the buffalo chicken mixture and top with cheddar cheese.
  6. Return filled skins to the oven for an additional 10-15 minutes until cheese is melted and bubbly. Serve drizzled with ranch dressing and a dollop of sour cream.
