- While baking, poach chicken in salted water for 15-20 minutes until cooked through; shred using two forks.
- Mix shredded chicken with hot sauce and melted butter in a bowl.
- Cool baked potatoes slightly, slice in half lengthwise, and scoop out some flesh to create skins.
- Fill each potato skin with the buffalo chicken mixture and top with cheddar cheese.
- Return filled skins to the oven for an additional 10-15 minutes until cheese is melted and bubbly. Serve drizzled with ranch dressing and a dollop of sour cream.
