  • 1 lb boneless beef round steak
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 cup whole milk
  • 1 tsp salt
  • 1 tsp black pepper
  • 4 tbsp butter for gravy
  • ½ cup flour for gravy
  • 1 cup low-sodium chicken broth
  • ½ cup heavy cream

Equipment

  • Meat Mallet
  • large skillet
  • whisk
  • bowls
  • tongs

Method

  1. Tenderize the steak with a meat mallet until about half an inch thick. Season both sides with salt and pepper.
  2. In one bowl, whisk together eggs and milk. In another bowl, place the all-purpose flour. Dip each steak into the egg mixture, then coat it in flour.
  3. Heat oil in a large skillet over medium-high heat until shimmering. Fry each coated steak for 3-4 minutes per side until golden brown. Remove and drain on paper towels.
  4. For the gravy, melt butter in the skillet using the drippings. Whisk in flour to form a roux, then gradually add chicken broth and heavy cream until thickened.
