Ingredients
  

  • 1 lb boneless, skinless chicken breasts
  • 8 oz Andouille sausage, sliced
  • 1 lb raw shrimp, peeled and deveined
  • 1 cup okra, sliced
  • 1 medium green bell pepper, diced
  • 1 medium red bell pepper, diced
  • 1 cup celery, diced
  • 1 cup onion, diced
  • ½ cup flour
  • ½ cup vegetable oil
  • 6 cups low-sodium chicken broth
  • 2 units bay leaves

Method
 

  1. Prepare your ingredients by dicing the vegetables and slicing the sausage.
  2. In a large pot over medium heat, combine flour and oil to make a roux. Stir continuously until it turns deep brown.
  3. Add the diced onions, celery, and bell peppers to the roux; sauté until tender (about 5 minutes).
  4. Stir in the chicken and sausage. Pour in the chicken broth along with bay leaves. Bring to a boil then reduce heat to simmer for 30 minutes.
  5. Add shrimp and okra during the last 10 minutes of cooking.
  6. Serve hot over rice with crusty bread on the side.
