  • 1 piece smoked ham hock or 4 slices bacon

  • 1 tsp dried thyme

Preparation
  1. Soak dried black-eyed peas in water for at least six hours or overnight.
  2. While peas soak, dice onion and mince garlic.
Cooking
  1. In a large pot over medium heat, sauté onion until translucent (about 5 minutes). Add garlic and cook for an additional minute until fragrant.
  2. Stir in soaked peas (drained), ham hock, and vegetable broth; bring to a boil and then reduce heat to low.
  3. Cover and simmer for about one hour or until peas are tender, stirring occasionally.
  4. Remove ham hock before serving; season with salt, pepper, and thyme according to taste.
