  • 2 tsps baking powder

  • 1/2 tsp salt
  • 1/2 cup unsalted butter, cold and cubed
  • 3/4 cup whole milk
  • 2 cups fresh strawberries, sliced
  • 1 cup fresh blueberries
  • 1 cup heavy whipping cream

Method
 

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together flour, baking powder, sugar, and salt.
  3. Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
  4. Gradually add milk, stirring gently until just combined.
  5. Turn the dough onto a floured surface; pat into a rectangle about an inch thick. Cut into rounds with a biscuit cutter.
  6. Place on the prepared baking sheet and bake for 15-20 minutes until golden brown.
  7. While shortcakes are cooling, macerate strawberries with sugar and whip heavy cream until soft peaks form.
  8. Assemble by slicing each biscuit in half horizontally, layering with strawberries, blueberries, and whipped cream.
