Ingredients
  

  • 4 pieces boneless, skinless chicken breasts
  • 1 cup slivered almonds
  • 1 cup panko breadcrumbs
  • 2 large eggs
  • 2 tsp garlic powder
  • Salt to taste
  • Pepper to taste
  • ¼ cup honey
  • ¼ cup Dijon mustard

Method
 

  1. Preheat oven to 400°F (200°C) and prepare a baking dish with nonstick spray.
  2. Cut chicken breasts into strips about the size of your index finger.
  3. In a bowl, combine slivered almonds, panko breadcrumbs, garlic powder, salt, and pepper.
  4. In another bowl, whisk eggs until frothy. Dip each chicken strip into the egg wash, then coat in the almond mixture.
  5. Place coated chicken strips on the baking dish and bake for 20-25 minutes or until golden brown and cooked through.
  6. Serve hot with honey mustard sauce.
