Ingredients
  

  • 4 pieces boneless, skinless chicken breasts
  • 3 cloves fresh garlic, minced
  • 12 oz penne pasta
  • 2 cups marinara sauce
  • 1 cup freshly grated Parmesan cheese
  • 1 cup panko breadcrumbs
  • 2 tbsp olive oil
  • Salt and pepper to taste

Method
 

  1. Preheat your oven to 400°F (200°C) and prepare a baking dish with nonstick spray.
  2. Season the chicken breasts generously with salt and pepper.
  3. In a skillet over medium heat, add olive oil and sauté minced garlic until fragrant (about 1 minute).
  4. Boil water in another pot and cook penne according to package instructions until al dente. Drain and set aside.
  5. In a large bowl, combine cooked pasta with marinara sauce, sautéed garlic, and half of the Parmesan cheese.
  6. Spread half of the pasta mixture in the prepared baking dish. Place seasoned chicken on top, then cover with remaining pasta mixture. Sprinkle with breadcrumbs and remaining Parmesan cheese.
  7. Bake for about 25-30 minutes until bubbly and golden brown. Serve with extra marinara sauce.
