Ingredients
  

Main Ingredients
  • 3-4 breasts boneless, skinless chicken about 1 lb
  • 1 cup fresh basil pesto
  • 12 oz fusilli or penne pasta
  • 1 cup cherry tomatoes halved
  • ½ cup grated Parmesan cheese
  • 2 tbsp olive oil
  • salt and pepper to taste

Method
 

Cooking Steps
  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Cook seasoned chicken breasts for about 6–7 minutes per side until golden brown and cooked through. Remove from heat and let rest before slicing.
  3. In the same skillet, add cooked pasta and mix with basil pesto until well-coated. Add halved cherry tomatoes and sliced chicken; toss to combine.
  4. Serve on plates, topped with grated Parmesan cheese and fresh basil if desired.

Notes
