  • 2 tablespoons poppy seeds
  • 1 tablespoon baking powder
  • 0.5 teaspoon salt
Wet Ingredients
  • 0.5 cups unsweetened applesauce acts as an egg substitute
  • 0.5 cups milk dairy or non-dairy
  • 0.25 cups vegetable oil
  • 2 tablespoons lemon juice freshly squeezed
  • 1 teaspoon lemon zest freshly grated

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a mixing bowl, whisk together the dry ingredients: flour, sugar, poppy seeds, baking powder, and salt.
  3. In another bowl, combine the wet ingredients: applesauce, milk, vegetable oil, lemon juice, and lemon zest.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
Baking
  1. Pour the batter into the prepared loaf pan and smooth the top.
  2. Bake in the preheated oven for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
  3. Allow the loaf to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
