How to Make Fluffy Buttermilk Belgian Waffles
- Preheat Waffle Iron & Oven: Preheat your Belgian waffle iron to medium-high heat according to manufacturer directions. Preheat your oven to 200°F (95°C) and place a wire cooling rack over a rimmed baking sheet inside (this keeps cooked waffles crisp while baking the rest).
- Whisk Dry Ingredients: In a large mixing bowl, whisk together all-purpose flour, granulated sugar, baking powder, baking soda, salt, and optional cinnamon until thoroughly combined.
- Separate Eggs & Whip Whites (The Secret to Fluffiness): In a medium bowl, whisk together the egg yolks, buttermilk, melted butter, and vanilla extract until smooth. In a separate clean bowl, use a hand mixer or whisk to beat the egg whites until stiff peaks form (about 2 to 3 minutes).
- Combine Wet and Dry: Pour the buttermilk-egg yolk mixture into the dry ingredients. Stir gently with a rubber spatula just until combined (do not overmix; a few small lumps are perfectly fine).
- Fold in Whipped Egg Whites: Gently fold the whipped egg whites into the batter in two additions using wide sweeping strokes until no large streaks of white remain. The batter should look airy, light, and full of bubbles.
- Bake to Golden Perfection: Brush waffle iron grids lightly with melted butter or oil spray. Ladle approximately 1/2 to 2/3 cup of batter into the center of the iron, spreading gently toward the edges. Close the lid and cook for 4 to 5 minutes until steam stops escaping and waffles are deep golden brown and crispy.
- Keep Crisp & Serve: Transfer cooked waffles directly onto the wire rack in the warm oven to maintain their crackling crispness while finishing remaining batter. Serve immediately crowned with salted butter pats, warm maple syrup, fresh berries, and a dust of powdered sugar!
