Ingredients
  

  • 1 lb beef chuck roast, cut into bite-sized cubes
  • 1/2 cup pearl barley
  • 2 medium carrots, sliced
  • 2 stalks celery, diced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 6 cups low-sodium beef broth
  • 1 tsp dried thyme
  • Salt & pepper to taste

Method
 

  1. Heat olive oil in a large pot over medium-high heat. Sear the beef until browned on all sides (about 5-7 minutes). Remove from pot.
  2. In the same pot, add onions, carrots, celery, and garlic. Sauté until soft (4-5 minutes).
  3. Pour in beef broth while scraping up any browned bits from the bottom. Return seared beef to the pot along with barley and thyme.
  4. Bring to a boil then reduce heat to low. Cover and let simmer for about 1 hour until barley is tender.
  5. Season with salt and pepper before serving hot.
