Ingredients
  

  • 6 large eggs
  • 1 cup whole milk
  • 4 strips thick-cut bacon
  • 1 cup shredded sharp cheddar cheese
  • 1 cup diced green bell peppers
  • 1/2 cup chopped onions
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp dried oregano

Method
 

  1. Preheat oven to 350°F (175°C) and grease a baking dish with nonstick spray.
  2. In a skillet, cook bacon over medium heat until crispy, about 8 minutes. Drain on paper towels.
  3. Sauté diced bell peppers and onions in the same skillet for about 5 minutes until tender.
  4. In a large bowl, whisk together eggs, milk, salt, pepper, and oregano until frothy.
  5. Crumble bacon into the egg mixture along with sautéed veggies and half the cheese; stir to combine.
  6. Pour the mixture into the prepared baking dish and top with remaining cheese. Bake for 30-35 minutes until golden brown and set in the middle.
