  • 10 whole fresh organic lemons (zest only)
  • 1 liter grain alcohol (like Everclear)
  • 3 cups granulated sugar
  • 3 cups water

Method
 

  1. Wash and zest the lemons, avoiding the white pith. Place the zest in a large glass jar.

  3. After steeping, combine sugar and water in a saucepan over medium heat to make simple syrup; stir until dissolved.
  4. Strain the lemon-infused alcohol into a clean container. Gradually add simple syrup to achieve desired sweetness.
  5. Bottle the limoncello and chill in the freezer before serving.
