- Rinse the soaked black-eyed peas under cold water.
- In a large pot over medium heat, add olive oil and sauté the diced onion until translucent. Add minced garlic and cook for an additional minute.
- Stir in the smoked ham hock and rinsed black-eyed peas. Add enough chicken broth or water to cover the mixture.
- Season with salt and cayenne pepper; bring to a boil before reducing to a simmer.
- After about an hour or when the peas are tender, stir in the long-grain white rice. Cover and cook for an additional 20 minutes until the rice is fluffy.
- Serve warm, optionally drizzled with hot sauce.
