Ingredients
  

Loaf Cake
  • 1 cup plain yogurt can substitute with Greek yogurt
  • 1 cup granulated sugar
  • 2 large eggs
  • 1/4 cup vegetable oil
  • 1 tablespoon lemon zest freshly grated
  • 1 tablespoon lemon juice freshly squeezed
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup mixed berries fresh or frozen
Glaze
  • 1 cup powdered sugar
  • 2 tablespoons lemon juice freshly squeezed

Method
 

Prepare the Loaf
  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a mixing bowl, whisk together the yogurt, sugar, eggs, vegetable oil, lemon zest, and lemon juice until smooth.
  3. In another bowl, whisk together the flour, baking powder, baking soda, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Fold in the mixed berries gently.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 50 minutes or until a toothpick inserted in the center comes out clean.
  8. Let the loaf cool in the pan for 10 minutes, then transfer to a cooling rack to cool completely.
Prepare the Glaze
  1. In a small bowl, mix the powdered sugar and lemon juice until smooth.
  2. Drizzle the glaze over the cooled loaf before slicing.
