Ingredients
  

Potatoes
  • 2 pounds baby potatoes halved or quartered
Dressing
  • 1/4 cup olive oil
  • 2 tablespoons fresh lemon juice about 1 lemon
  • 1 teaspoon lemon zest
  • 2 tablespoons fresh dill chopped
  • 1 teaspoon Dijon mustard
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper freshly ground
Vegetables
  • 1 cup celery diced
  • 1 cup red onion diced
  • 1 cup cherry tomatoes halved

Method
 

Prepare Potatoes
  1. In a large pot, bring salted water to a boil. Add the baby potatoes and cook until tender, about 15-20 minutes. Drain and let cool.
Make Dressing
  1. In a mixing bowl, whisk together olive oil, lemon juice, lemon zest, dill, Dijon mustard, salt, and pepper until well combined.
Combine Ingredients
  1. Once the potatoes have cooled, add them to the bowl with the dressing. Add diced celery, red onion, and cherry tomatoes. Toss gently to coat.
Chill and Serve
  1. Cover the salad and refrigerate for at least 30 minutes to allow flavors to meld. Serve chilled.
