Ingredients
  

Salmon and Asparagus
  • 4 fillets salmon skinless
  • 1 bunch asparagus trimmed
  • 2 tablespoons olive oil for drizzling
  • 1 lemon zest and juice
  • 1 teaspoon black pepper freshly ground
  • 1 teaspoon salt to taste
Quinoa
  • 1 cup quinoa rinsed
  • 2 cups water for cooking quinoa
Garnish
  • 2 tablespoons fresh parsley chopped
  • 1 tablespoon lemon wedges for serving

Method
 

Prepare the Quinoa
  1. In a pot, combine quinoa and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes until water is absorbed. Fluff with a fork.
Roast the Asparagus
  1. Preheat the oven to 400°F (200°C). On a baking sheet, toss asparagus with olive oil, salt, and pepper. Roast for 10-12 minutes until tender.
Cook the Salmon
  1. Season salmon fillets with lemon zest, lemon juice, salt, and black pepper. In a skillet over medium heat, cook salmon for about 4-5 minutes per side until cooked through.
Assemble the Bowls
  1. In bowls, layer quinoa, top with roasted asparagus and salmon. Garnish with parsley and serve with lemon wedges.
