Ingredients
  

  • 4 thighs bone-in chicken about 1.5 lbs
  • 1 lb red potatoes halved
  • 2 pieces bell peppers one red, one yellow, sliced
  • 3 tbsp extra virgin olive oil
  • 2 tsp smoked paprika
  • 1 tsp garlic powder
  • Salt to taste
  • Pepper to taste

Method
 

  1. Preheat the oven to 400°F (200°C) and prepare a large baking dish.
  2. In a bowl, coat the chicken thighs with olive oil, smoked paprika, garlic powder, salt, and pepper.
  3. Toss the halved potatoes and sliced bell peppers in olive oil, salt, and pepper until well-coated.
  4. Arrange the seasoned chicken in the baking dish and surround it with the potatoes and peppers.
  5. Roast for 45-50 minutes or until the chicken reaches an internal temperature of 165°F (75°C) and vegetables are tender.
  6. Let rest for 5 minutes before serving.
