  • 2 packs instant ramen noodles
  • 4 cups chicken broth
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp fresh ginger, grated
  • 3 green onions, sliced
  • 2 soft-boiled eggs, halved
  • 2 tbsp white miso paste

Method
 

  1. In a large pot, combine chicken broth, soy sauce, and grated ginger. Bring to a simmer over medium heat.
  2. Add ramen noodles to the simmering broth and cook according to package instructions (about 3 minutes).
  3. Stir in white miso paste until dissolved; taste and adjust seasoning if needed.
