  • 4 medium Yukon Gold potatoes, diced
  • 3 large carrots, chopped into thick chunks
  • 1 large yellow onion, diced
  • 4 cloves garlic, minced
Liquid and Seasoning
  • 4 cups low-sodium beef broth
  • 2 tbsp Worcestershire sauce
  • 1 tsp dried thyme

Method
 

Cooking Steps
  1. In a skillet over medium-high heat, brown the beef for 3-4 minutes on each side until crusty.
  2. Layer the browned beef in a slow cooker and add onions, garlic, potatoes, and carrots.
  3. Pour in the beef broth and Worcestershire sauce; sprinkle thyme on top.
  4. Stir gently and add salt and pepper to taste.
  5. Cover and cook on low for 8 hours or high for 4 hours.
  6. Ladle into bowls and garnish with fresh parsley if desired.
