Ingredients
  

Crust
  • 1 each pie crust store-bought or homemade
Filling
  • 1 bunch asparagus trimmed and cut into 1-inch pieces
  • 4 large eggs
  • 1 cup heavy cream
  • 1 cup goat cheese crumbled
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon nutmeg optional

Method
 

Prepare the crust
  1. Preheat the oven to 375°F (190°C). Place the pie crust in the pie dish and prick the bottom with a fork. Pre-bake for 10 minutes.
Prepare the filling
  1. In a mixing bowl, whisk together the eggs and heavy cream until well combined. Stir in the salt, black pepper, and nutmeg.
  2. Add the asparagus pieces and crumbled goat cheese to the egg mixture and stir gently to combine.
Bake the quiche
  1. Pour the filling into the pre-baked pie crust. Bake in the preheated oven for 25-30 minutes, or until the quiche is set and lightly golden on top.
  2. Allow to cool for a few minutes before slicing and serving.
