Ingredients
  

Pasta
  • 12 oz Pasta (e.g., fettuccine or linguine) Use whole wheat or gluten-free if preferred.
Sauce
  • 1 cup Heavy cream
  • 1 cup Fresh peas Frozen peas can be used as a substitute.
  • 1 medium Lemon (zest and juice) Zest for flavor, juice for acidity.
  • 2 tablespoons Olive oil
  • 1 clove Garlic, minced
  • 1/2 teaspoon Salt Adjust to taste.
  • 1/4 teaspoon Black pepper Freshly ground is best.
  • 1/4 cup Parmesan cheese, grated Optional for serving.

Method
 

Cook Pasta
  1. Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta in a colander.
Prepare Sauce
  1. In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
  2. Pour in the heavy cream and bring to a gentle simmer. Stir in the lemon zest, lemon juice, salt, and pepper.
  3. Add the fresh peas and cook for 2-3 minutes until they are tender.
Combine
  1. Add the drained pasta to the skillet with the sauce. Toss to combine, adding reserved pasta water a little at a time until the desired consistency is reached.
  2. Serve immediately, garnished with grated Parmesan cheese if desired.
