  • 1/2 cup chopped walnuts or pecans
Dry Ingredients
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground cloves
Wet Ingredients
  • 1/2 cup unsalted butter, softened
  • 3/4 cup brown sugar
  • 3 large eggs
  • 1/2 cup brandy or rum for soaking

Method
 

Baking Process
  1. Preheat oven to 325°F (160°C). Grease and line a loaf pan with parchment paper.
  2. In a bowl, soak dried fruits in brandy or rum for at least 2 hours or overnight.
  3. In another bowl, whisk together flour, baking powder, cinnamon, nutmeg, and cloves.
  4. Cream butter and brown sugar until light. Add eggs one by one while mixing well.
  5. Gradually fold in dry ingredients followed by soaked fruits and nuts until combined.
  6. Pour batter into the prepared pan and bake for about 60 minutes or until a toothpick comes out clean.
  7. Allow cooling before slicing.
