  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter (softened)
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/4 tsp salt
  • 1 cup raisins

Method
 

  1. Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large bowl, cream together softened butter, brown sugar, and granulated sugar until light and fluffy (about 3 minutes).
  3. Add eggs and vanilla extract; beat until well combined.
  4. In another bowl, whisk together flour, baking soda, cinnamon, and salt. Gradually add this dry mixture to the wet ingredients until just combined.
  5. Fold in rolled oats and raisins until evenly mixed.
  6. Drop rounded tablespoons of dough onto prepared baking sheets about two inches apart.
  7. Bake for 10-12 minutes or until golden brown around the edges but still soft in the center. Let cool slightly before serving.
