  • 2 cups mixed dried fruits (raisins, currants, chopped apricots)
  • 1/2 cup dark rum (or apple juice) for soaking
Cake Batter
  • 1 cup unsalted butter, softened
  • 1 cup brown sugar
  • 2 cups all-purpose flour, sifted
  • 4 large eggs
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg

Method
 

Preparation
  1. Soak dried fruits in dark rum or apple juice overnight for enhanced flavor.
  2. Preheat the oven to 300°F (150°C) and grease an 8-inch round cake tin.
  3. In a mixing bowl, cream the butter and brown sugar until light and fluffy.
  4. Add eggs one at a time, mixing well after each addition.
  5. In another bowl, whisk together flour, baking powder, cinnamon, and nutmeg. Gradually fold into wet ingredients until just combined.
  6. Gently fold in soaked fruits along with any remaining liquid.
  7. Pour batter into the prepared tin and smooth the top.
  8. Bake for approximately 2 hours or until a toothpick comes out clean.
  9. Cool in the tin for 10 minutes before transferring to a wire rack.
