Ingredients

  • 1 large egg yolk
  • ½ lemon juiced approx. 2 tablespoons
  • 1 clove garlic finely chopped or grated
  • 2 teaspoons Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • 2-3 fillets anchovy or 1 ½ teaspoons anchovy paste
  • ¼ cup neutral light oil such as grapeseed oil, vegetable oil, or light olive oil
  • 2 tablespoons extra virgin olive oil
  • ¼ cup finely grated parmesan cheese
  • 2-3 tablespoons water as needed
  • kosher salt to season
  • ground black pepper to season

Equipment

  • immersion blender

Method

  1. To the jar that came with your immersion blender, add the egg yolk, lemon juice, garlic, Dijon mustard, Worcestershire sauce, and anchovy. Season generously with ground black pepper.
  2. Insert the immersion blender into the jar and blend the egg mixture. Slowly stream in the neutral oil while blending until the mixture emulsifies and becomes thick and creamy. Then add the extra-virgin olive oil in the same manner.
  3. Stir in the parmesan cheese. If needed, thin the dressing out with water until the desired consistency is reached. Taste and season with additional salt or ground black pepper as needed. Use immediately as desired.

Notes

You can customize the sauce by substituting anchovies with capers for a vegetarian option or adding fresh herbs for extra flavor.
