Ingredients
  

Pasta
  • 12 oz spaghetti or any pasta of choice
Vegetables
  • 1 cup asparagus trimmed and cut into 1-inch pieces
  • 1 cup peas fresh or frozen
  • 1 cup zucchini sliced
  • 1 cup bell pepper diced
  • 1 cup cherry tomatoes halved
Sauce
  • 3 tbsp olive oil extra virgin
  • 2 cloves garlic minced
  • 1 tsp lemon zest
  • 2 tbsp lemon juice freshly squeezed
  • 1/2 tsp salt to taste
  • 1/4 tsp black pepper freshly ground
  • 1/4 cup parmesan cheese grated, optional
Garnish
  • 2 tbsp fresh basil chopped

Method
 

Cook Pasta
  1. Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Drain and set aside.
Sauté Vegetables
  1. In a skillet, heat the olive oil over medium heat. Add the garlic and sauté for 1 minute until fragrant.
  2. Add the asparagus, zucchini, and bell pepper. Cook for about 5 minutes until they start to soften.
  3. Stir in the peas and cherry tomatoes, cooking for an additional 3-4 minutes until heated through.
Combine and Serve
  1. Add the cooked pasta to the skillet with the vegetables. Pour in the lemon juice, lemon zest, salt, and pepper. Toss to combine.
  2. Serve in a large bowl, garnished with fresh basil and grated parmesan cheese if desired.
